About Neil

 

Neil has had a long and colourful career as a Chef.  He intially studied in the Culinary School of America in New York, where he was trained in Classical French Cuisine.  He then went on to continue his training at Vongs Restaurant in New York, where their focus on Fusion cuisine. 

After this he pursued his career in various large 5 star hotels around the world, including The Ritz Carlton group, followed by various assignments as Head Chef, on large super yachts.  More recently he has been employed by the Saudi Royal Family in Jeddah, Saudi Arabia. Neil also previously instructed culinary skills to students in Cheltenham, UK.

Over the years, and different trends with food, Neil's passion lies with good quality, and fresh seasonal produce.  Being half Italian, he also has a inherrant flair for Mediterrean cuisines, which he combines with his professional training in Classic French cuisine.

Neil beleives that nothing can be as inspring, for creating wonderful menu's and dishes, than walking around local markets and seeing all the beautifully presented fruits and vegetables, awash with colour, scents, and flavours, or just being able to pick your own produce grown in the garden.
