Due to popular demand, and many requests, we have published some of our recipes from our guests favourite dishes, and cakes.

This will be updated on a monthly basis according to the food that is currently in season.

Pea & Feta Salad

500g Fresh pea pods

1 Courgette

150 g Feta cheese

½ bunch spring onion

Small bunch of Fresh mint

Small bunch of Parsley

Dressing:

Walnut oil

Lemon juice

Method: Finely chop thecourgette into cubes, along with the Feta cheese.  Chop the mint & parsley.  Lightly blanche the peas.

Mix the lemon juice, andwalnut oil together, and season to taste.

Fresh Peas are in season at the moment, and are well worth the effort popping all the pods! 

This salad is not only delicious but really colourful, and a great accompaniment to any meal.  Add a few chive flowers on top for that finishing touch....
