Icona Cookery School

The summer in Chamonix valley is a vibrant and fascinating place, that goes through an amazing transformation, from a winter wonderland to a lush green pastures, awash with wild flowers and the sound of cow bells on the steep mountain pastures.

Here at Chalet Anchorage we have created a cooking course, which taps into the Alpine way of life by visiting local artisans and vineyards across Savoie, and into the Italian Aosta valley. You will try your hand at making buffalo mozzarella along with watching and learning the process of curing and preserving local meats. While tasting the finest wines the region has to offer, as we introduce you to the patrons and their vineyards. You will visit local markets and meet stall owners who will infect you with their passion for all things fresh and seasonal.

The afternoons will be spent at our chalet, drawing upon inspiration from the produce we have gathered and sights you have seen during that day. Whilst then learning how to prepare, and organise food for healthy and seasonal alfresco meals, barbeques, and formal dining, which will take place, over long relaxed meals, sharing ideas and stories, with lots of eating and drinking.

This together with your enthusiasm and my twenty years experience, You will learn to develop your own dishes, and create beautiful settings, as Julie and I, truly believe that eating is not just about flavours but "setting the scene" and creating a wonderful dining experience.
